Spring is energising...

Springtime is a time of detoxification after the hibernation of winter. Bitter greens are the first vegetables to emerge as the ground temperature increases. The bitter flavour of these greens helps cleanse the liver, the detoxification organ of the body. Indulge in watercress, endive, rocket, herbs, spinach, lettuce, fennel... and the short-lived harvest of asparagus, artichokes and broad beans.

On the fruit front there is citrus - oranges, mandarins, tangelos, lemons and grapefruit still in full-swing. And the illusive rhubarb with its crimson stalks. Sprinkle with brown sugar, grill until golden and serve with creamy greek yogurt... delicious.
