Nicola Galloway chef and nutrition consultant

Nicola Galloway is a trained chef with a diploma in nutrition (Canada) who is passionate about the benefits of healthy and flavoursome food. Her passion for the culinary arts began stirring at a young age in her Nanna's kitchen with Thursday afternoon cooking sessions. Raised by two doctors, her focus on health was never far behind her love for creating good food.

Nicola is the author of two recipe books Alive: Food for Health and Vitality (2004), a cookbook focusing on allergy sensitive recipes and Cooking for your Child – healthy recipes from first foods to school lunches. She also edited and project managed the creation of the cookbook, Memories from my Kitchen (2007), which raised over $20,000 for the Nelson Region Hospice Trust. Nicola regularly contributes articles and recipes to a number of publications, including a food column in Nelson Marlborough's magazine Wild Tomato and the online directory Organic Direct.

Nicola's mission in life is to inspire others to make healthy food choices and enjoy the art of cooking. She is particularly passionate about supporting local organic growers and in 2005 set up Fresh2U, an organic produce home delivery scheme, with Nelson-based organic grower Wolfgang Mann.

"Thank-you Nicola for the course – it has changed my ideas and what we do for the whole family. I am loving the benefits of eating well - boy do I feel better, especially without the hungry low dips during the day - so thank you again!"
